Olive oil of the Istrian bjelica, leccino, pendolino and frantoio varieties is produced directly from the olive fruit. Hand-harvested fruits are cold-pressed within 24 hours after picking to become extra virgin olive oil of superior quality, greenish in color, full of flavor with spicy notes.
