Istrian cow's cheese in Teran is a hard, full-fat cheese that, after ripening for 60 days, was aged in barrique barrels filled with red wine from the indigenous Teran grape variety. After the optimal aging time, the cheese is removed from the wine and is immediately ready for consumption. Due to the wine, the cheese rind is purple-brown in color, but the color of the paste is light yellow to yellow. It has a hard structure, suitable for cutting. The aroma of Teran cheese is more pronounced and characteristic of mature cow's cheeses and specific to the wine, full-flavored with the characteristics of cow's milk and a note of acidity that the wine gives to the cheese rind. It is especially loved by lovers of intense flavors.
