Istrian cheese in teran drop is a hard full fat cheese that matured in barrique barrels full of red wine of the indigenous Teran grape after 60 days of ripening. After the optimum aging time, the cheese is removed from the wine and ready for consumption.
Because of the wine, the crust is purple-brown, but the color of the dough is light yellow to yellow. It is a rigid structure, suitable for cutting. The aroma of cheese in teran is more pronounced and characteristic of mature cow cheeses and is wine specific, full of taste with characteristics for cow's milk with a touch of acidity that the wine has on the cheese crust.
