The palate has a slight touch of sweetness and gentle acidity, but also the smell of freshly mown grass. The firm and elastic texture melts in the mouth or a slight heat treatment and becomes creamy.
The crust is smooth and compact, while tiny holes are evenly distributed throughout the straw-yellow interior, a product of the metabolism of microorganisms involved in the cheese's ripening process.
