Bacon is a product that is not processed, but fresh meat is seasoned and brined - pressing it with weights to release the liquid. After marinating, the meat is put again in the spices (salt and pepper, with the addition of bay leaf) and left to dry.
The bacon is dried for about three months, depending on the weight of the product.
