Istrian sausage with walnuts

He traveled the whole world and was always on the throne, initially as food for the Roman gods, later for the English kings, today he is famous as "medicine for people". Walnut has a history in Istria as well. Heavyweights used it to pass the time on long winter evenings: they would sit by the hearth and peck at a nut shaped like a human brain, protected by a woody shell that hides the core of the fruit. Fruit is synonymous with sweet, sin, a gift at the end of a meal, so the walnut was a delight for the Istrian peasant as he educated new generations by word of mouth, scaring them with mysterious forces and supernatural beings that were believed to gather just under the walnut tree. Even today, walnut is an indispensable table offering of every Istrian tavern.

Type of meat: pork shoulder and back solid fatty tissue.

Spices: garlic, bay leaf, salt, pepper, with the addition of walnuts.
