Mixed cheese

Istrian mixed cheese Cow's milk spinach with the addition of up to 30% sheep's milk is halfway between cow's and sheep's milk. The harmonious blend of these two different flavors is ideal for those who do not like overly intense sheep's cheese and yet prefer a cheese that tastes slightly sharper than regular cow's.

It has mild notes of sheep's milk, but also the aroma of cow's milk. Beneficial acids and salty minerality are its main features. It is slightly more fragile than cow's, but still elastic enough to cut. It is less creamy in the mouth but is therefore greasy to the palate.
