Istrian mixed cheese in walnut leaves is a hard full-fat cheese made from a mixture of cow's and sheep's milk, and it is produced according to traditional technology using the pressing method. It reaches technological maturity after 60 days and is then wrapped in walnut leaves. The rind of the cheese is straw yellow with recognizable patterns caused by the maceration of walnut leaves. The consistency of the dough is hard, suitable for cutting, while the color of the dough is dark yellow depending on the stage of ripening. The smell is specific, with a pronounced note of walnuts and a characteristic smell of mixed milk cheese. The taste of this cheese is slightly sweet, enhanced by the desirable bitterness of the walnut leaf.
