CARBONA (KARBONACA) - The oil produced by this olive is extraordinary. The fresh oil has a pronounced piquancy, bitterness and sweet taste. It smells like olive fruit. Carbona oil has a light taste that goes well with various salads, fresh cheese, risotto with vegetables. They are also used in the preparation of cakes and even in combination with ice cream.
FRANTOIO - It is a highly valued variety because of the exceptional and high-quality oil it produces. If the harvest is carried out when the fruits are wine-reddish in color - it gives an oil with a pronounced fruity smell of the olive fruit, pleasant bitterness and spiciness. The fruits of this variety can also be used for canning. It is a very powerful oil and, accordingly, it is an excellent addition to foods that also have an intense taste, such as steak, truffles, game, etc.
MORAIOLO - The quality of the oil produced by the Moraiolo olive is excellent. However, in order for the oil to be of top quality, the fruit must be harvested when it is semi-green in color. Its taste is balanced with pleasant bitterness and spiciness. Top chefs recommend adding it to dishes such as boiled vegetables, cream soups, baked fish and mature cheeses.
ISTARSKA BJELICA - It is an oil with a fresh smell of green olive fruit, very harmonious with balanced fruitiness, sweetness, bitterness and marked spiciness. What is interesting about the oil produced from this variety is that its bitterness goes extremely well with chocolate. Therefore, it is ideal as a topping on chocolate ice cream or mousse, for example, bitter chocolate and hazelnut cake.
