The Istrian Bjelica is an olive, as it is called, which originates and is the most widespread in the area of Istria and Kvarner. However, recently this variety is very often planted in the interior of Dalmatia, the Slovenian coast, and in Herzegovina.
Istrian bjelica is a very resistant variety of olive. It is resistant to low temperatures and pests.
Its tree is lush with upright branches, while its fruit is medium-sized, light green in color when fully ripe. The pollinators of the Istrian birch are Pendolino, Frantoio and Leccino. Its flowering is medium long with an average of 20 flowers per bloom. It gives birth abundantly and regularly.
Istrian Bjelica is the earliest variety of olive to be harvested in the Republic of Croatia. Which means that it is harvested at the beginning of October.
The oil content in the olive fruit is about 22%. The oil produced by this olive is of top quality and is a favorite among Istrians. This oil has a fresh smell of green olive fruit, very harmonious with balanced fruitiness, sweetness, bitterness and marked spiciness. What is interesting about the oil produced from this variety is that its bitterness goes extremely well with chocolate. Therefore, it is ideal as a topping for chocolate ice cream or mousse, and, for example, a cake made of bitter chocolate and hazelnuts.
