Istrian ombolo

Umbolo is a product that is not processed, but the fresh meat is seasoned and brined - by pressing it with weights to let the liquid out. After marinating, the meat is put again in the spices (salt and pepper, with the addition of bay leaf) and left to dry.
The umbolo is dried for about three months, depending on the weight of the product.
Drying takes place only in the wind, without smoke.
