Prosciutto (the piece)

Ham is a product that is not processed, but fresh meat is seasoned and brined - pressing it with weights to let the liquid out. After marinating, the meat is put again in the spices (salt and pepper, with the addition of bay leaf) and left to dry.
The ham is dried only in the wind, without smoke, for at least 1 year, depending on the weight of the product.
