Istrian truffle cheese combines two important Istrian traditions - cheese making and truffling.
It is made from milk and truffles from Istria, using the same technology as Istrian cow cheese, with the addition of black truffles (1%) and truffle-flavored olive oil, and is nurtured in special conditions.
The straw-yellow crust interspersed with small pieces of black truffle and hard paste make the cheese suitable for slicing, and the taste and aroma are specific to cow's milk and truffle.
The inside is soft and supple, while the crust gets the contours of ripe cheese, a bit more crunchy and more colorful. The cheese is buttery, rich in flavor with the characteristics of sheep's and cow's milk and a bit sweet. It melts easily in the mouth. The smell of his majesty truffle is pervading the foreground.
